The Roasted Pecan & Herb Turkey Cheese Ball
A brilliant, conversation-starting appetizer that marries whimsy with sophisticated flavor, coated in toasted pecans and accented with clever edible plumage.

You’ll Need
- 16 oz (two blocks) cream cheese, softened
- 2 cups sharp white cheddar cheese, freshly shredded
- 3 tbsp sour cream
- 1 tsp Worcestershire sauce
- 1 tsp garlic powder
- ½ tsp smoked paprika
- 2 green onions, finely minced
- 1.5 cups chopped pecans, toasted
- For the Turkey Details: Whole unpeeled almonds (for the feathers/wings), one black peppercorn or whole clove (for the eye), a small wedge of orange cheddar cheese or red bell pepper (carved into a beak and wattle), and a sprig of fresh rosemary (for the tail feather garnish).
Preparation
- Mix the base: In a large bowl, beat the softened cream cheese, sour cream, Worcestershire sauce, garlic powder, and smoked paprika until thoroughly smooth and luminous. Fold in the sharp white cheddar and minced green onions.
- Shape & chill: Transfer the mixture onto a large sheet of plastic wrap. Gather the edges and shape the cheese mixture into a large teardrop or plump oval ball (the body of the turkey). Chill in the refrigerator for at least 3 hours until firm.
- Coat in pecans: Roll the chilled cheese body generously in the toasted chopped pecans until completely coated. Place it on your serving platter.
- Assemble details: Press whole unpeeled almonds, pointed-side down, into the back of the cheese ball in a fan shape to create the majestic tail feathers. Garnish the base with fresh rosemary sprigs.
- Finish & serve: Affix the red bell pepper or orange cheddar beak and wattle to the tapered front end, and press the peppercorn gently into place for the eye. Serve surrounded by artisanal crackers, crostini, and crisp apple slices.
