  • 8 oz cremini, shiitake, or mixed wild mushrooms, cleaned and sliced

Complete Step-by-Step Preparation

  1. Roast the garlic: Preheat your oven to 400°F (200°C). Slice off the top 1/4 inch of the head of garlic to expose the individual cloves. Drizzle with a little olive oil, wrap tightly in aluminum foil, and roast for 40 minutes until cloves are golden, tender, and caramelized. Allow to cool slightly, then squeeze the soft roasted garlic out of their skins into a small bowl and mash with a fork.
  2. Warm the broth: In a medium saucepan, bring your chicken or vegetable broth to a gentle simmer over low heat, keeping it warm throughout the cooking process.
  3. Sauté the mushrooms: Heat 1 tablespoon of olive oil and 1 tablespoon of butter in a large skillet or Dutch oven over medium-high heat. Add the sliced wild mushrooms and fresh thyme sprigs.   6. Add broth gradually: Begin adding the warm broth one ladleful at a time (about 1/2 cup per addition), stirring frequently. Wait until the liquid is almost entirely absorbed before adding the next ladle. This process should take about 18 to 22 minutes until the rice is creamy and al dente.
